Also known as my exam results celebration slash attempt at using up all of the slightly wrinkled fruit lying around my kitchen due to a somewhat excessive and over-excited farmers’ market haul last week…
I mean, who could possibly resist perfectly ripe, juicy peaches and gorgeously crimson sour cherries?! Combining to form a creamy, thick, refreshing, just slightly sweet smoothie that I could practically live off (I’d need chocolate too, you see), I’m completely besotted with them at the moment.
Succulent peaches, tangy, violaceous sour cherries, velvety coconut milk, a splash of almond milk, and a smidgen of raw honey whizz together to form a delicious, frothy smoothie. It’s incredibly quick and easy to make, but you can enliven it with a splash of fresh lime juice or a pinch of freshly grated ginger if you want to!
You can also double this recipe to make a few creamy summer popsicles, and if you can’t find sour cherries, feel free to substitute with sweet cherries or fresh berries!
peach & sour cherry smoothie
Prep Time: 5 minutes
Ingredients (serves 1)
- 1/4 cup coconut milk
- 1/4 cup almond milk
- 1 large, ripe peach
- 10 sour cherries, pitted (you can use normal ones too)
- 1 tsp raw honey
1. Place all the ingredients in a blender and blend for 1-2 minutes, until extremely smooth and creamy!
2. Taste, adjust honey as required. If you want to, add a handful of ice and blend for another minute or so until smooth.
