Hi! Just made these and while they were good, we still found the coconut base a bit icey. I’m thinking a few things could be part of it: the coconut milk we used, how long we cooked it for, or how much we whisked it. What do you think? It was so close though so definitely want to try it again but not quite there yet.

Hi Ida! I definitely think those things could have contributed to the texture – as you probably know, allergen-free cooking is a fine art and the smallest things can make a difference! You might also want to try leaving them out for just a little longer before enjoying to let the ice cream soften a little – this often helps reduce the icy feel. Let me know how things work out, and thanks so much for trying them 🙂

These look awesome and I really want to try making them. Quick question however, what kind of mold did you use? I checked Amazon and they seem a bit expensive….

Hey , I am honestly so inspired right now by your blog and your healthy lifestyle. I’m 18 as well and to have you as a role model for healthy eating is amazing. I was actually going to yoga and saw your book. Hopefully , one day I will be able to make these recipes to the same standard as you. What I find inspiring is how you turned your diagnosis and saw the positive side of life and started cooking to fit your needs.
