Confession: I’m deeply infatuated with a vegetable-filled, green-hued, pineapple-mint smoothie.
It started off with a simple coconut milk, kale, and frozen banana affair. I started to experiment, and my staple smoothie turned into a mixture of coconut water, cucumber, apple, spinach, and frozen mango. Coconut milk, frozen berries, chia seeds, and kale was the next favourite, and there were quite a few more before I finally stumbled across this glorious combination of almond milk, spinach, frozen pineapple, a banana, a squeeze of lemon, a handful of mint, chia seeds, and a spoon of coconut oil. So, so delicious.
I’m not going to pretend that I down a green smoothie every single day morning because, let’s face it, I’m sleepy, hungry, and usually late by the time I make it to the kitchen, but I do try to fit one in at least once a week, and this pineapple-mint version is my absolute, absolute favourite. Creamy yet refreshing, slightly sweet but still hearty, and spruced up with the classic lemon + mint combination, this is seriously a winner because: a) it tastes amazing, and b) it’s incredibly good for you.
Feel free to play around with this smoothie, too! The recipe (if I can even call it that!) below is just a guide, so add some fresh parsley, switch up the lemon juice for lime juice, try out kale instead of spinach, use coconut water rather than almond milk – the possibilities are endless. If I’m in need of a protein boost, I’ll add a teeny bit of spirulina or a spoonful of almond butter, and I love adding acai powder as well for a bit more fruity-ness. The frozen pineapple adds a cold, creamy element, but if you like your smoothies ice-cold, you can always add in a handful of ice or use a frozen banana instead. However you choose to modify your smoothie, as long as you stick to the measurements in the recipe, you’ll come up with a delicious way to drink your greens!

pineapple-mint green smoothie
Prep Time: 10 minutes
Ingredients (serves 1)
- 1 cup organic baby spinach (you can use any sort of leafy green, but spinach is my favourite – it has a milder taste than other leafy greens like kale)
- 1 cup unsweetened almond milk
- 1 cup frozen pineapple
- 1/2 a medium banana
- a squeeze of lemon juice
- a good handful of fresh mint
- 1 tablespoon chia seeds
- 1 tablespoon coconut oil
1. Starting with the almond milk, add all the ingredients to a blender.
2. If desired, add a handful of ice. Blend in short bursts of 20-30 seconds or until completely liquefied and no little bits remain. This could take 2-3 minutes!
3. Pour into a large glass and enjoy!
